- Hurricane Coffee - Our heartfelt prayers go out to the residents of Alabama, Louisiana, Mississippi, and Texas whose lives were changed by "Katrina" and/or "Rita." Many businesses are affected. The coffee industry depended on New Orleans as a Port of Entry for about 25% of our country's green coffee beans. Some 1.6 million bags of green beans remain in storage in New Orleans. Many are concerned about the unknown environmental factors pertaining to these stored beans. The Dallas coffee eXchange, and some other specialty coffee roasters, have decided, NOT to roast any beans now stored in New Orleans. We have switched the Port Of Entry for our green coffee beans to New Jersey and other US ports for the foreseeable future or until we are absolutely certain that all environmental factors and questions have been properly resolved.
Our label will now show the "Green Beans Certified Port of Entry" for all shipments received Post-Katrina. We feel that this is the right thing to do.
- A Great Cup of brewed coffee depends on:
- Amount of ground coffee
- Water quality
- Brewing method
Of these, the correct amount of ground coffee to use is most important. Use one scoop - 30ml or about 2 Tablespoons - per cup of brewed coffee. Vary the amount of water to change the strength of the coffee brewed. YES, CHANGE the amount of water to change the strength of the coffee. Do not change the amount of ground coffee used! Correctly brewed coffee should be dark, not a watery, weak brown color.
- Small Batches - Although we can roast more than a thousand pounds of coffee a day, we prefer to roast hundreds of pounds instead...in small, 20# batches. Smaller roasts mean more care and consistency. Actually, a smaller batch means that we can throw out our mistakes because we do not have to ship it! Be assured, your order will be filled with only coffee that has recently been roasted. If you doubt this, just ask your mailman how it smells. (We sell coffee to lots of postal workers!)
- High Quality Green Beans - We insist on the highest quality, café arabica green beans because it makes our job a lot easier. If quality of the green bean is a secondary worry, we can stay focused on the roasting process and servicing of our clients...an elegant business attitude that proves to be the right way to do things.
- Unique Tastes - Each coffee-growing country has different growing conditions and unique coffee plants. This is why the coffee from each country and even different crop years taste different. There are also differences within a country depending on where the coffee was grown and the age of the coffee plants. The end result is very similar in many ways to fine wines. Obviously, each country claims that theirs is the best, but the ultimate test is what your taste says.
Privacy Statement - Rest assured that the private information you provide is not shared or sold to any other company or person. Our - ours and yours - business is nobody's business but ours.
